From a long line of farmers, Charlemagne Mayot opened a bakery on rue de la Mackellerie in Croix in the North of France (near Lille). It is from this origin that PAUL derives its attachment to Flanders.

Francis Holder begins to work with his parents who have taken over a famous bakery from Lille, located in Place de Strasbourg and which belonged to a "PAUL" family. The name is kept. Julien Holder died in 1958 and Francis took over the family bakery with his mother. A second bakery opened in 1963. ©iStock/Dedee
